I grow Stropharia rugosoannulata (wine cap) mushrooms in my garden both to eat, and also to make soil. With a couple of weeks' notice, I can make a litre or two of spawn for you to innoculate your own garden with. It grows in woodchip – it's good in mulch, though it's slowed down by pine, especially fresh pine.
